The Zenobi Extra Virgin Olive Oil, Autumn 2020 Harvest is available!

Thanks to the extremely favourable weather conditions last year, the olives were naturally healthy from blossom to harvest, and the sustainable production was generous. A welcome relief for olive growers in the peaceful Marche region during the very difficult 2020.

The traditional processing of the olives in the Zenobi oil mill began in the second half of October 2020 and was completed before 15 November. At the time of cold pressing, the olives were intentionally in their initial state of ripeness. This is typically a key parameter to achieve a higher polyphenol content and the best possible organoleptic quality.
The superior quality of the fruits and the short time between the harvest and the cold pressing process are reflected in the excellent chemical analysis values of the extra virgin olive oil as follows:

Free fatt acids: 0.15 %
Peroxides: 6.9 meqO2 / kg

The analysis certificate is available on request. Nevertheless, no certificate or datasheet can capture the aromatic sensations of this excellent extra virgin olive oil.     Ein großartiges Olivenöl, selten habe ich so eines gekostet. Die hohe Qualität des Olivenöls messe ich persönlich auch an der Haltbarkeit. Dieses von euch hält sich sogar weit über das angegebene MHD, ich hatte mal eines sogar über zwei Jahre und ohne jeglichen Geschmacksverlust. Das fand ich toll! Darum, danke für dieses Produkt.     Wollte eigentlich noch wissen was ausschlaggebend ist, dass das Olivenöl so lange noch gut schmecken und riechen kann? Werden dem Olivenöl etwa Konservierungsstoffe zugesetzt oder liegt es an dem niedrigem Säuregrad? Eure Hanne aus W.

    Liebe Hanne, Olivenöl ist grundsätzlich ein rein Naturprodukt und darf keinerlei Zusätze enthalten. Säuregrad ist der Wert, der den Zustand der Oliven zum Zeitpunkt der Pressung an gibt. Die Früchte müssen frisch und unverletzt sein, ohne Oxidationsprozess, nur dann gibt es den guten niedrigen Säuregrad und lange Haltbarkeit. Oxidationsprozess macht die Früchte ungenießbar und für Olivenöl ungeeignet. Stehen die Früchte länger gelagert, werden sie nicht fachgerecht z. B. in Säcken eingesammelt, oder haben einen Transportweg hinter sich, hat die Frucht bereits angefangen zu oxidieren. Von solchen Früchten sollte grundsätzlich kein Qualitätsprodukt erwartet werden. Es gibt auch weitere Faktoren die den Säuregrad ausmachen können, diese kann der Mensch allerdings kaum beeinflussen.
